Unlike other Shun Classic knives, the Flex Fillet uses AUS8A steel for better flexibility, maneuverability, and toughness. This allows for better navigation of the tightest of spaces so you can perfectly trim fish straight from the bone. The ultra-sharp 16° edge means no more wasted or mangled fish meat damaged by old and under-performing knives.
